Château Fayau is a charming �??chartreuse�?� style house surrounded by vines in the centre of Cadillac. Most of its wines are produced on the hillsides overlooking the town. The wine-making tradition goes back to 1711, and the Médeville family acquired the property in 1826. Château Fayau is the centre of the operation and controls over 100 acres of vines.

Soil : Clay-siliceous.

Grape varieties : 70% cabernet sauvignon, 30% merlot

Average age of the vines : 25 years

Vinification :

Grapes are destemmed before vatting. Fermentation lasts for 15 to 18 days under temperature control. Wine is matured in vats before bottling

Ageing :

After filtering, in vats.

Bottling : Estate- bottled two years after harvest.

A deep purple colour, this wine reveals flavours of red fruits, wild strawberry and cherry. It is supple and round on the palate with fine tannins.

Suggestion: Food and Wine :

A great match with a chicken and potato stew or a pheasant terrine.
